Smoky roasted chickpeas

Crisp, savoury little bites for the space between meals or the drive home.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 teaspoon olive oil
  • ½ teaspoon smoked paprika
  • ¼ teaspoon ground cumin
  • A pinch of garlic granules
  • Chopped parsley and a pinch of salt

How to make it

  1. 01Heat the oven to 200°C. Pat the chickpeas dry with a clean tea towel; this helps them crisp.
  2. 02Toss with oil, paprika, cumin, garlic, and salt. Spread on a baking tray.
  3. 03Roast for 25–30 minutes, shaking the tray once or twice. Cool for 5 minutes, then finish with parsley.
