Lentil and roasted vegetable bowl

A colourful bowl built from lentils, roasted vegetables, greens, and a herby spoonful of yogurt.

Ingredients

  • 1 cup cooked green lentils
  • 1 small courgette, sliced
  • 1 red pepper, sliced
  • 1 cup cherry tomatoes
  • 2 handfuls baby spinach
  • 1 tablespoon olive oil
  • ⅓ cup plain Greek yogurt
  • Lemon juice, parsley, salt, and pepper

How to make it

  1. 01Heat the oven to 220°C. Toss the courgette, pepper, and tomatoes with oil, salt, and pepper, then roast for 20–25 minutes.
  2. 02Mix yogurt with lemon juice and chopped parsley. Taste and season gently.
  3. 03Divide the lentils and spinach between bowls. Add the warm vegetables and finish with the herby yogurt.
