Herby white bean tomato skillet

A one-pan supper with tender beans, greens, tomatoes, and enough sauce to mop up.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, sliced
  • 1 can chopped tomatoes
  • 1 can cannellini beans, drained and rinsed
  • 2 handfuls baby spinach
  • ½ teaspoon dried oregano
  • A little crumbled feta and chopped parsley

How to make it

  1. 01Warm the oil in a wide pan. Cook the onion for 5 minutes, then add the garlic and oregano for 1 minute.
  2. 02Stir in the tomatoes and beans. Simmer for 12–15 minutes until thick and warm.
  3. 03Fold in the spinach until just wilted. Finish with feta and parsley, then serve on its own or with a measured slice of wholegrain toast.
